Creamed Onions Ellsworth
2 tablespoons unsalted butter
4 large onions, diced
1 ½ teaspoons thyme
1 ½ teaspoons sage
Nutmeg, white pepper to taste
1 ½ cups heavy cream
In a large saucepan, cook onions slowly (30 minutes) in butter until soft but not brown.
Add the herbs and stir.
Bring to a boil, reduce heat, and simmer until reduced by half.
Can be refrigerated up to two days. To reheat, top with pats of butter, stir, and reheat slowly, stirring constantly.
